Dark Chocolate Brigadeiro Alma do Cacau
Who doesn't love a brigadeiro, right? And what if you add quality dark chocolate? The Dark Chocolate Brigadeiro recipe is a sophisticated version of this traditional Brazilian sweet, made with the best cocoa, without additives and completely natural.

Ingredients:
- 200g of Alma do Cacau chocolate (70% or 85%, as you prefer)
- 1 can of condensed milk
- 2 tablespoons butter
- 3 tablespoons cocoa powder
- Chocolate chips (or raw cacao nibs for a healthier version)
- A pinch of fleur de sel (optional, to enhance the flavor of the chocolate)
Preparation Method:
- Start by melting the Alma do Cacau chocolate. You can do this in a bain-marie or in the microwave, stirring every 30 seconds to prevent it from burning. Let it cool a little while you prepare the rest of the mixture.
- In a pan, add the condensed milk and butter. Cook over medium heat, stirring constantly to prevent burning.
- When the mixture starts to pull away from the bottom of the pan (approximately 10-12 minutes), add the cocoa powder and stir until well incorporated.
- Add the melted chocolate to the mixture and continue stirring until the mixture becomes creamy and begins to pull away from the bottom of the pan again.
- Transfer the mixture to a greased dish and let cool completely at room temperature (about 1 hour).
- After cooling, grease your hands with a little butter and start rolling small portions of brigadeiro, forming balls the size of a walnut.
- Roll the brigadeiro balls in traditional chocolate sprinkles or, for a more intense version, use raw cocoa nibs, which will complement the flavor of the dark chocolate perfectly.
- If you like contrasts, add a pinch of fleur de sel to give it a final touch that will enhance the flavor of the chocolate.
- Serve the brigadeiros on a platter or in paper cups and get ready to delight everyone with the flavor!
