Ingredients

  • 200 g of dark chocolate from Alma do Cacau
  • 4 eggs
  • 50 g sugar
  • 200 ml whipping cream
  • 1 pinch of salt
  • Optional: chocolate shavings or red fruits for decoration

Preparation Method

  1. Start by melting the dark chocolate in a double boiler or in the microwave, stirring every 30 seconds to prevent it from burning. Let the melted chocolate cool slightly.
  2. Whip the cream until stiff.
  3. Separate the egg whites from the yolks.
  4. Set aside the egg yolks and beat the egg whites with a pinch of salt until stiff.
  5. Beat the egg yolks with the sugar until you get a thick, whitish cream.
  6. Mix the melted chocolate with the egg yolk and sugar cream. Stir well to obtain a homogeneous mixture.
  7. Fold the whipped cream into the chocolate, using gentle movements from bottom to top to maintain the lightness of the mousse.
  8. Finally, add the beaten egg whites to the chocolate mixture, stirring gently until everything is well combined without losing its lightness.
  9. Place the mousse in glasses or a large bowl and refrigerate for at least 3 hours, so that it reaches the ideal consistency.
  10. Before serving, decorate with chocolate shavings or red fruits to add an extra touch of flavor and color.
