Chocolate Truffles: A Classic Recipe

Chocolate truffles are an elegant and delicious sweet treat, perfect for giving as a gift, sharing on special occasions or simply enjoying in a moment of pure delight.

Ingredients

  • 200 g of Alma do Cacau dark chocolate
  • 100 ml of cream
  • 30 g unsalted butter
  • 1 teaspoon vanilla extract (optional)
  • Cocoa powder for sprinkling
  • Optional: orange zest, chopped walnuts or sea salt flakes for garnish

Preparation Method

  1. Finely chop the dark chocolate and set aside in a heat-resistant container.

  2. In a small saucepan, heat the cream and butter over low heat until almost boiling, stirring occasionally so the butter dissolves completely. If desired, add the vanilla extract at this point.

  3. Pour the hot mixture over the chopped chocolate. Wait 1 to 2 minutes for the heat of the liquid to begin melting the chocolate, then stir gently with a spatula or spoon until the mixture is smooth and even. Make sure the mixture doesn’t get too hot to preserve the silky texture.

  4. Cover the bowl with plastic wrap (touching the surface of the mixture to prevent a skin from forming) and let cool to room temperature. Then place it in the refrigerator for about 2 hours or until the mixture is firm enough to be shaped.

  5. Using a spoon or your hands (lightly greased with butter or neutral oil), take small portions of the dough and shape them into uniform balls. If the dough is too soft, leave it in the refrigerator for a few more minutes.

  6. Roll the truffles in cocoa powder until well coated. You can also garnish with orange zest, chopped nuts or a pinch of sea salt flakes, depending on your taste.
